Been a while, but the nut butter fun is still in full swing.
But to be honest, as with most of the things I tackle in life, it’s not long before my head starts wanting to experiment with something new.
Not “new” as in another niche; new, as in, veering off course with the nut butter recipes that have established themselves as winners.
The banana nut butter works.
I have two now. I wanted only one, but the market dictates that I offer two kinds:
- One semi-nutritious option using dried honey-coated banana chips.
- One nutritious option using dried banana sans any ingredients save sulphur dioxide.
But I wanted to play around some more. (Show me the boy who’s happy with one Meccano set.)
One ingredient I tried was cocoa butter.
Bought some raw cocoa butter, changed up the macadamia nut and cashew nut ratios, and added a smidgeon of cocoa butter to the mix.
Couldn’t stand it.
The cocoa butter adds an odd taste.
It feels like it’s supposed to taste like chocolate, but it refuses to comply.
It just gives me cognitive dissonance, like seeing a woke person say something sensible.
The only way I could fix the nut butter mixture I’d murdered with cocoa butter was to add more of the other ingredients.
So I dumped a ton (give or take) of honey into the whole thing to try and drown that horrific cocoa butter flavour.
It sort of worked.
I handed out the batch of failed nut butter to friends, and, amazingly, the feedback on what I considered a complete flop was surprisingly positive.
One friend opened the container, started in with a teaspoon, and mentioned that she couldn’t wait to add it to her morning oats.
That was refreshing.
But cocoa butter seems to be a persistent little bastard.
Despite drowning it in nuts and honey it kept popping up.
So I’m not using it again.
Still looking for something to bind the whole lot together and make it smoother.
I have to.
There’s a market for nut butter that doesn’t weld to the roof of your mouth or brake halfway down your throat, so I need to get the formula sorted.
As of yet I’ve not come across anything.
I think the answer is closer than I think.
I just have to get in touch with my inner self and discover true beauty and truth.
